Cookie Dough Brownies

The MckLinky Blog Hop theme today is Favorite Recipe--there's no way I could narrow down to one favorite recipe, but I've taken these brownies to many a party or work function and I almost always get a request for the recipe. They consist of a brownie base with a layer of cookie dough, topped with a chocolate glaze. And they are super-easy and, unlike other cookie dough, salmonella-free! :-)

Cookie Dough Brownies

Ingredients:
Brownie mix (family size, plus eggs and oil)
1 package semi-sweet chocolate chips (reserve 1 cup)
1/2 cup butter
1/2 cup brown sugar
1/4 cup sugar
2 Tbsp milk
1 tsp vanilla
1 cup flour
1 Tbsp vegetable oil

Prepare brownie mix according to cake-like instructions in a 9x13 pan. Stir in all but 1 cup of the chocolate chips. Bake according to package directions and cool completely.

For the filling, cream butter with both sugars until smooth. Add milk and vanilla. Blend in flour. Spread over the cooled brownies (and feel free to lick the beaters!).

For the glaze, melt the remaining 1 cup of chocolate chips with 1 Tbsp vegetable oil over double boiler or in microwave. If using microwave, heat for 1 minute on High, stir, then continue heating in 30 second increments until melted and smooth. Spread the glaze over the brownies and allow to cool.

Slice into squares and enjoy!
