Random stuff

Just a few things:
  • We tried a new freezable recipe last week, Green Chile-Chicken Casserole from Cooking Light. I've been seeing recipes for King Ranch Chicken casserole everywhere (my Southern Living annual cookbook and Kelly's blog), and this recipe sounded similar to that but lower in fat/calories. I made it using bone-in chicken breasts (cooked according to this recipe) and split it into two 8x8 pans. We ate one and froze one. It was yummy and tasted fattening, even though it is fairly healthy (for a cheesy Mexican dish)--John had about 3 helpings and Will ate most of his share. We haven't eaten the frozen one yet, will probably do so this week (cleaning out the fridge in preparation to move in 2 weeks!) Anyway, click HERE for that recipe.

  • In exciting news, I was a runner-up in the "Gaggle of Geese" contest over at My Sister's Farmhouse. The entries were hilarious--you have to go over there and check out the winner, it is priceless.

  • And we're famous! Sort of. Go HERE and scroll down and see if you recognize anybody. This blogger did our birth announcement for Anna--I'd seen her blog previously and then found her stuff on Etsy. She was really great to work with and will do custom invitations or announcements that you can print as pictures (at Target, Shutterfly, etc.), making them very affordable.

That's all for now. Anna is 2 months old today so that means it's time for shots! She has been packing on the thigh padding in preparation. :-)
